Bomb Digity Chicken

Oh my heck dinner tonight was good. It was really called Sour Cream Chicken bake but I renamed it to be Bomb Digity Chicken! We had it with crash hot potatoes & corn. I know, not a real good picture but when a meal is this good, who cares about the picture. My Mom tasted it & she said it reminded her of her pheasant she cooks.

1 lb. chicken breats cut in 1/2 or 1/3rds
1 can cream of chicken soup
1/2 cup mayo
1 cup sour cream
1 tablespoon lemon juice
1 tablespoon onion powder
1 tablespoon poultry seasoning 1 1/2 cups shredded cheese (reserve 1 cup for later)
salt & pepper to taste
Mix all ingredients together except for 1 cup cheese. Spray casserole dish with pam, put mixture in pan & bake for 25 minutes. Stir & bake for 20 more minutes. With 5 minutes left, put remaining cheese on top to melt. Eat!

Don't make Colby mad...

..or else he will kick out your teeth like he did to Jordan. This picture was taken a few days later, and yes, the tooth was a little loose, but not near ready to come out. Jordan was bugging Colby one day over at my Mom's so Colby decided to kick his tooth out to get back at him. Kendyl & Sydney happened to be over there at the time & I asked Kendyl later that night what happened & she told me Colby kicked out Jordan's tooth and then it started bleeding and then Jordan started to throw up. (I'm sure at the site of the blood, he has a way weak stomach)! Lesson learned. (When I told Jordan to smile, he said no Mom cause your going to put it on our blog, ya think I take to many pictures)?

Austin's Football Banquet

Tonight we had Austin's football banquet. Here is a picture of Coach Olsen, Austin's friend Marty Adams, Austin & Willis. They all had a good time! We met down at the South Weber Rec. Center, and ate Cafe Rio burritos & salads (YUMMY), then listened to Coach McBride from Weber State. He had a good message for the boys and they all really seemed to enjoy having him there. After that, they gave out awards & watched their season highlight film. It was a fun night!

When Coach McBride was done talking, he went through and shook everybody's hands. He didn't miss a person. The kids thought they were on cloud nine!
Here is Coach McBride during his talk. He told so many stories of when he was coaching and when he had his own kids playing that related to everything from every aspect of playing sports.

Topsy Turvey Taco Bake...

How's that for a name? It get's it's name because you take it out of the flip it upside down onto your plate. It's kinda like a navajo but it has a cornbread crust thing. It's way yummy, top it with your favorite taco toppings (cheese, lettuce, sour cream, salsa, whatever). It's so yummy, I want some more right now but we ate it all. I just served it with spanishh rice.

1 ½ lbs. ground beef (raw)
1 egg
1 T. instant onion (just the dried minced stuff)
1 can (8 oz.) tomato sauce
1 pkg (1.25 oz.) taco seasoning
1 pkg (8.5 oz.) cornmeal muffin mix (I used a jiffy mix)
Toppings (chopped tomatoes, avocado, shredded lettuce, green onions, cheese, black olives, salsa, and sour cream - whatever you like on your taco)Combine beef, egg, onion, tomato sauce and taco seasoning. Spread in even layer in bottom of baking dish (I used an 8 1/2 x 11 dish). Bake at 350 degrees for 20 minutes. Prepare cornmeal muffin mix according to package directions. Spread over top of beef. Continue baking at 400 degrees for 15 minutes longer. Remove from oven and let sit on counter for 10 minutes. Turn upside down on serving plate and top with toppings.

Chicken Cordon Bleu Pasta

Here's what we had for dinner the other night. It's a spin off of Chicken Cordon Bleu's, made with pasta. It was reeeeaaallly good! Willis said it's his new favorite. It's way super easy. I made a new recipe for homemade rolls that honestly took 1 hour 20 minutes total to make and they were super good. (Maybe cause it calls for 1/3 cup sugar & I accidently put in 1 cup - owell). In case anyone wants the recipe (Ty) here it is:

2 cups cooked, diced chicken (I had a leftover rotisserie chicken that I cut up and used)
1 1/2 cups ham, diced (I went to the deli and had them do 2 thick slices & I diced that up)
2 cans cream of chicken soup
8 oz sour cream
2 cups shredded Monterrey Jack cheese
cooked pasta (I used a 16 oz box of penne)
milk (I need to add some to make the sauce the right consistency)
Combine all ingredients in a medium sauce pan until cheese is melted, smooth, and creamy. Mix sauce & pasta together and serve! You can just spoon it over the pasta if you like.

Here Turkey...Turkey!!

Willis loaded up Colby & took my Dad hunting the other day for a couple of hours to see if they could find my Dad a deer. They came across these turkeys when they were cruising along somewhere. Colby was pretty excited. They pretty much saw everything they couldn't shoo that day.

Sad Day in the Football World!

We'll unfortunatley Austin's team lost today in the playoffs so we are now out. BUMMER! I think Austin's expression pretty much sums it up. He was mad because I insisted on taking his picture right after the game & he wasn't in the mood for it. Owell Aust - I got it! Austin had a incredible year, I told Willis I think he improved 100%. He had about 10 sacks this year and every game had at least 1 awesome tackle if it wasn't a sack!

On Friday night we all bundled up and went to go watch Devin (our nephew) play football. He is so awesome with the boys & the boys totally idolize him. He'll sit an wrestle with Jordan & Colby as much as they want, and he'll let Austin chill with him because we all know Austin is to cool to wrestle or anything like that. He played awesome & had some good runs. He's already gotten several letters from Colleges and he's still a junior. Go Devin!

The Bee's Game

I found these pictures & figured I would put them on here. Back in July I got suite tickets from my work to the Bees game. So Willis & I deccided to take the boys and my neice Taylor. I had never been to a Bees game before and it was pretty fun! I think everyone had a good time.

Beef tips over pasta!! YUM!

This was tonights dinner. Very easy & very yummy! We had beef tips over pasta, beans & rolls.
Here it is if anyone wants it.

2 lbs. beef cut up (I just used some stew meat I had in the freezer)
2 cans Cream of Mushrooms soup
1 cup water
1 pkg. brown gravy mix
1 can mushrooms (optional)
1 pkg. dry onion soup mix

Mix all ingredients together and put in a 9x13 pan. Cover with foil & bake at 300 for 3 hours. Cook some pasta & there ya got it! EASY!!

Who needs to go to Weber State to feed the Ducks?

After the great big huge rainstorm we had on Saturday, when we got home from football, we noticed we had our own duck pond in our backyard. Behind our house is a park and it had filled with water from the rainstorms. I guess these ducks figured they had found a safe zone so they landed here. After all, it was the duck opener today. There were 4 malards & 5 hens. The boys loved it. They ran and got our bread and went and feed them. Colby kept saying he wanted to pet them.

Austin's Hit of the Week Award!

Austin received the hit of the week award for football this week. Each week when the coaches review the game film at their meeting, they decide on a player who had an outstanding game the week before. This week Austin got it. He had 4 sacks & several NICE tackles. He is really doing well & playing hard. He starts both ways each week so he's seeing TONS of playing time. He was really excited to be picked by the coaches. Nice job Aust!

To die for Roast...

Here's a picture of our dinner from tonight. We had this roast and it was soooo good. The meat was tender and juicy. Here's the recipe:
1 3 lb. Roast
2 cans Cream of Mushroom soup
1 pkg. Liptons Onion Soup mix
Carrots
Potatoes

Put roast in crockpot, mix soups together & pour over roast. Cook on low for 6-8 hours. About 1 hour before roast is done, cut up potatoes & boil with carrots for 9 minutes, then add to roast until done. (This way they don't get over cooked & mushy). Enjoy!!
